Fruited Quinoa Breakfast

Lately I have been helping host a couple of cooking events with Whole Foods, mainly so I can just eat while learning how to make some incredible vegan foods! While hosting yesterday’s class with Vicki, she made these amazingly delicious breakfast bowls. They were incredibly simple, but it just takes that different point of view to make your breakfast  something new. This dish is full of protein, fiber and heart-healthy ingredients!
You can add really anything to this bowl that you want, but we stuck with the basics.

Makes 6 1/2 cup servings.

-1/2 cup dry quinoa, well-rinsed
-1 1/2 cups vanilla rice milk
-2 tablespoons raisins
-1 cup chopped fresh peaches
-1/4 teaspoon vanilla extract
-cinnamon to taste

How to:
Combine quinoa and rice milk in a medium saucepan. Bring to a slow simmer, then cover and cook for about 15 minutes until the quinoa is tender. Stir in raisins, peaches, vanilla and cinnamon. Serve warm or chilled.

It was such an easy dish to create that I knew I would be able to recreate it in the morning while I am still walking around like Frankenstein before my coffee. I am sure that you could even prep this the night before and let it be more of an overnight dish that you just pull out of the refrigerator and start eating! Next time I am going to try it with some shredded coconut and maybe a few walnuts on top! Being such a fan of this dish, I could eat it for breakfast, lunch or a sweet treat in the evening!
