Happy Sunday everyone! I hope that you are all having a fantastic weekend. It has actually been getting quite warm here in LA the past couple of days-getting up into the 90’s! Shorts have been whipped out from closets and the aroma of back yard barbecues can be smelled lingering in the nighttime air. To help with our summertime love I fell in love with this amazing recipe from Sumptuous Spoonfuls so today we are making this delicious corn salad that is full of basil, chives, cucumbers and a hint of pepper.
Let’s get eating!
3 cups cooked cut corn (from about 5 medium cobs)
2 cups cucumber, peeled, seeded and chopped (about 1 large cucumber)
1/2 cup basil, chopped
1/4 cup chives, snipped
2 Tablespoons light mayonnaise
1/2 teaspoon Crushed Red Pepper
Salt & fresh ground pepper, to taste
In a medium mixing bowl, toss together the corn, cucumber, basil and chives. Stir in the mayonnaise and the . Add salt & pepper to taste.
Serve within a few minutes … or store in a covered container in the fridge until serving time.
