Energy Balls of Love!

It’s 3 o’clock and you still have a few more hours to go at work. Oh why is this day going on forever?? Instead of reaching for your eighth cup of coffee for the day, try reaching for these delicious and easy to make little energy balls thanks to Emma over at Better with Cake. These date, chia and coconut energy bites pack some serious flavor and are totally healthy! They are natural with no refined flours or sugars added. They also happen to be vegan and paleo friendly! They will help you to get a little pick me up to finish of your day at work, to munch on before a big workout (or after), or just to pop in place of cookie butter ice cream while watching Clueless. IMG_6198-1.jpg

{Better with Cake}

What you will need:

(Makes approx 40)

12 pitted,  medjool dates (approx 3/4 cup)

1/3 cup of raw cashews

1/3 cup of Raw Almonds

4 Tablespoons of Chia Seeds

3 Tablespoons of shredded coconut

1/2 teaspoon of vanilla extract

1/8 teaspoon of ground cinnamon

How to:

Place almonds and cashews into your food processor/blender and process until they are ground into a fine flour. Don’t turn them to dust though we still have some more processing to do and we want our energy bites to have a little texture to them.

Add dates, vanilla and cinnamon and process until well combined.

Add chia seeds along with 2 tablespoons of your shredded coconut and process until combined. If you find your dough is a little dry add a splash of water and process again.

Use your hands to roll your dough into bites size balls and set aside , about 1 heaping teaspoon per bite.

Place your remanning tablespoon of shredded coconut into a small bowl and gently roll some of your delicious little bites to coat.

Store in the fridge in an airtight container for up to 2 weeks
