Breakfast Smoothies

With having such a hectic schedule, it can sometimes be a challenge to make sure that I am eating the most nutritional foods. Every second of every day seems to be packed with meetings, errands and random projects. Therefore, to help make sure that I am eating something of nutritional value (as oppose to grabbing that second bear claw at the office!) I have become obsessed with making smoothies! They are so easy, quick and convenient!

Here area few of my breakfast time favorites:

The Healthy Elephant: (adapted from Hubbard and Cravens)

Vegan-Banana-Chocolate-Coconut-Smoothievia: kitchentreaty

1 c. unsweetened almond milk

1 tbsp. unsweetened cocoa powder

1 frozen banana

1 tbsp natural peanut butter

1 scoop protein powder (I love the Optimum Nutrition in Mocha Cappuccino)  

Mix in a blender for a minute and enjoy!

*For an extra boost, put a handful of freshly washed spinach in the mix. You can’t taste it, but it’s a great iron boost!

Strawberry & Avocado Smoothie:

Don’t let this one scare you! The avocado is an amazing source of healthy fats and will help give your hair and skin a nice glow.

1 c. unsweetened almond milk

1 c. nonfat greek yogurt, plain

1/2 avocado, stoned and diced

1 c frozen strawberries

1/2 c. frozen mango, optional

honey, to taste

Now blend and slurp!

Lastly is the Mango-Kale Smoothie. I have always just eyed kale as being that extra dinner plate garnish so it’s hard for me to get excited about eating it, but with kale being the most nutrient dense food on the planet, I figured I should just suck it up and enjoy!

Mango Kale Smoothie

1/2 c -1 c. dinosaur kale, (remove the stems and chop)

1/2 c. frozen mango

1 frozen banana

1 c. unsweetened almond milk

Place everything in a blender and enjoy!
