Manchego Mashed Potatoes


I am not really sure what could be a better combination in the world than mixing starches and fats. That is just a surefire win when it comes to the perfect Holiday feast. With a combination of basically a one to one ratio of potatoes and cheese, you just might have to whip out your stretchy pants before the dessert cart even rolls around.

4 pounds baby red potatoes
2 teaspoons salt
4 tablespoons butter, cut into small pieces
1 cup heavy cream
2 1/2 cups Manchego cheese, shredded

Halve the potatoes and place in a large pot, cover with water and bring to a boil over medium heat.

Uncover, salt the water and cook until the potatoes are tender.

Drain the potatoes and put them back to the hot pot.

Add the butter, cream and cheese and smash the potatoes to desired consistency.

Season with salt and pepper, to taste.
