Pumpkin Protein Bars




Of course the day after we start this program, Starbucks sends me an email saying, “Hey guurrll! What’s up gurl? You know what…we have your fave back and it’s awesome, so come get some yum-yum sauce of pumpkin spice goodness and enjoy! you don’t need to stinkin livefit caca!” ok, I might be paraphrasing, but that is what I felt like it said.

I love fall, I love pumpkin, I love sugar and spice and everything nice, so when I saw that Jamie had a pumpkin protein bar I was all about that shiz. 


Now, the recipe does call for xylitol, which is a little pricey, but it will go a long way and it tastes just like sugar! Also, it is made with oat flour, now don’t go spending lots of money on buying oat flour, jst make your own by pulsing lots of oats. 



Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein

Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein




  1. Preheat the oven to 350.

  2. Spray a 9 X 13 Pyrex dish with non-stick spray.

  3. Combine first 11 ingredients and mix well.

  4. Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.

  5. Makes 24 squares.
