Minty Fresh: Chocolate Mint Cookies

I know tomorrow is Thanksgiving, but I’m ready for more Christmas style flavors!
A few years back I had a big cookie party event with one of my awesome friends and we made these amazing cookies that I’ve been dying to make ever since!

These are super easy, super delicious, and always a hit at any party. I give you: Chocolate chocolate mint cookies!

1 tbsp ground flax mixed with 3 tbsp water (the egg)
3/4 c. Earth balance
1/2 c. Brown sugar
1/2 c. Sugar
1 tsp vanilla extract
1/2 tsp peppermint extract
1-1/2 c Unbleached flour
1/4 c unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
1 c. Vegan chocolate chips

Preheat the oven to 375*


In a small bowl mix the flaxseeds and water so it can become tacky like an egg, set aside.
Now cream the fat and the sugar till its nicely blended.


After that is good to go, mix in the extracts and the “egg” into the butter mixture.


In a separate bowl, sift all of the dry ingredients together and stir those bad boys up! Now introduce them to the wet bowl and work that all together, then slowly add in your chips.


Line the cookie sheets with the somewhat unappealing darkened blobs and bake for 10-12 minutes. Once they are done, pull them out and let them sit for a few minutes before transferring to a cookie rack. Serve with some nice SoyNog (so gross sounding I know, but so good!!) or a good cup of Starbucks blonde roast, cause blondes are the best..and enjoy!
