Pumpkin Pancakes

Pumpkin pumpkin everywhere!

Everything needs to be pumpkin flavored this time of year, and a nice tasty treat to start your morning would be Martha Stewart’s Pumpkin Pancakes:



1 1/4 c all-purpose flour

2 tbls sugar

2 tsp baking powder

1/2 tsp cinnamon

1/2 tsp ginger

1/2 tsp. salt

1/8 tsp nutmeg

pinch of cloves

1 c. milk

6 tbsp pumpkin puree

2 tbsp melted butter

1 egg (or substitute with flax)


Whisk all-purpose flour; sugar; baking powder; cinnamon, ground ginger, and salt; nutmeg; and a pinch of ground cloves.

In a separate bowl, stir together milk, pumpkin puree, melted butter, and egg; fold mixture into dry ingredients.

Melt some butter in a skillet over medium heat; pour in 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side; serve with butter and syrup. Makes 8 to 10.

Pair it with some Coffee Bean pumpkin spice coffee and you’re day is heading in a good direction!
